Ingredients:

3/4 C applesauce +2T cornstarch (for egg substitute for 3 eggs)

2 C sugar

1 C applesauce

3 t vanilla

2 C peeled, grated zucchini

3 C flour

1 t baking soda

1 t salt

3 t cinnamon

Directions:

Preheat oven to 325F.

 

Beat egg substitute, sugar, applesauce, and vanilla in a mixing bowl.

 

Add zucchini and beat.

 

Add in remaining ingredients and mix.

 

Pour into 2 greased loaf pans. Bake for 1 hour.
