Ingredients:

4 zucchini 
1 container salsa 
1 package meat-substitute (we like WestSoy cubed seitan) 
1 package shredded non-dairy cheeze (we like Daiya mozzarella-style shreds)

Directions:

Slice zucchini in half lengthwise and hollow them out with a spoon (save the insides for zucchini bread!)

In a bowl, mix the seitan and the salsa together and spoon the mixture in to the zucchini boats. Sprinkle with shredded cheeze.

Bake in a clear baking dish at 350 degrees for 25 minutes. Put under broiler for a few more to brown the cheeze.
