Ingredients:

2 cans water-packed tuna (no salt added)

vegan mayonnaise

green onions, chopped

3 stalks celery, chopped

8 slices vegan cheddar cheese

8 slices whole wheat bread

Directions:

Mix tuna salad.

 

Toast two slices of bread at a time. Spread tuna on bottom slice, and cover with two slices vegan cheese. Place on plate in microwave for 20-30 seconds to melt cheese.

 

Repeat. 

 

Makes 4 sandwiches.
