Ingredients:

1 small onion, chopped
Sea salt
4 cloves garlic, minced
2 C vegetable broth
2 C non-dairy milk
1-2 bunches of broccoli florets, chopped
1 ½  C nutritional yeast flakes
4 t lemon juice
freshly ground black pepper

Directions:

In a large pot, sauté the onions until soft. Season with the salt, add the garlic and continue to cook until everything has softened. Next, add the broth, milk and broccoli and bring to a simmer. Cover and reduce the heat to medium-low, allowing it to simmer for another 20 minutes or so, or until the broccoli is tender.
 

Use an immersion blender to blend parts of the soup. Over low heat, add the nutritional yeast flakes until dissolved. Add the lemon juice and then season with sea salt and black pepper. Mix well. Add milk to desired consistency.
 

For croutons: spray croutons with soy sauce and mix with spices, bake at 350 until desired crispiness.
