Ingredients:

2 carrots, cut and peeled

2 celery stalks, peeled and chopped

1 container fresh salsa

2-3 cans of black and/or navy beans, rinsed and drained

1 C vegetable stock

2 meatless sausages, sliced

Directions:

Saute carrots and celery in olive oil until soft (low heat)


Add in a handful of flour and stir until it starts to thicken

 

Add broth and stir to thicken

 

Add in salsa, beans, and sausages

 

Simmer on low 30-40 mins
