Ingredients:

Dressing

1/2 T olive oil
1 T balsamic vinegar
1 t honey

 

Salad
~10 oz fresh baby spinach
1 C sliced fresh strawberries
1 C fresh blueberries (and blackberries if desired)
1 can thinly-sliced, drained raw beets (no salt added)
1 C chopped toasted walnuts

non-vegan addition: 1 small container crumbled goat cheese

Directions:

To toast the walnuts, pre-heat oven to 350. Roughly chop the walnuts and spread onto a cookie sheet (you can line it with parchment paper if desired). Toast 5-10 minutes, checking regularly. Walnuts will go from toasted to burnt very quickly! 

 

To prepare vinaigrette,whisk ingredients in a small bowl and set aside.

To prepare salad, combine salad ingredients and dressing and toss gently.
